A Mother and Son, Betting on Blue
Saby’s is run by Graciela Diaz and her son Javier, who took over this corner kitchen in February 2020 with just $132 between them. They bet it all on blue corn, a payment plan, and the neighborhood Javier had called home since he was four.
Blue Corn, Made From Scratch
Our friend Doña Aurelia taught us to nixtamalize blue corn, and now runs one of the Westside’s rarest in-house tortilla programs. Sourced from downtown L.A. and pressed fresh daily, it’s the heart of nearly everything on our menu.
Rooted in Mar Vista
Pushed out by rising rents but never far from home, we built Saby’s to stay part of the community we love. Three years and one pandemic later, Graciela owns the very kind of kitchen she once worked in for someone else.
